Protein diet!!

I have a practice of including protein in our daily food menu in one way or other. Paneer is one of our favorites.
It's a simple to make home made paneer. Boil milk till it raises, add whey till it cuddles and keep stirring till water separates. Transfer into a cheese cloth and wash it under running water. Knead it for 15 mins and flatten it. Keep some heavy object for an hour or so on it. Yummy paneer ready.

This platter has spinach paratha, semi-gravy of paneer-tomatoes-onion and capsicums. Curd and the quintessential household dish tomato rasam.

Gulkand:

Wash and clean the rose petals and soak them in clean water. I added some rose water too. Just towel dry them and add some honey or sugar. I added honey.

Spinach gulkand paratha:
Pressure cook spinach with some turmeric and little salt and once done make it a paste.

Add some oil and splutter mustard seeds, black cumin. Add some ginger garlic paste, cut green chilly, 1/2tsp red chilly powder, 1tsp of Garam masala powder, hing and boil it for 3 to 4 minutes and some salt to taste mix some gulkand according to your taste preference.

Mix it with whole wheat flour and knead it with hands by adding required water. Rest the dough for sometime and roll into parathas.

Semi gravy kadai paneer:

Add 2 tsp oil, splutter black cumins add ginger garlic paste and sauté till raw smell goes away. Add thinly sliced onions and sauté till they turn transparent, add capsicums and sauté. Add 1.5 taps of homemade dry roasted coriander powder and nicely grounded chilly flakes.
Add 1tsp of turmeric and garam masala , 1/2 tsp of chilly powder and some salt to taste and sauté.
Add freshly blended tomatoes and sauté till they ooze out the oil and then add very little water.
Now add the paneer cubes and boil for 3 mins.
Garnish with kasuri methi.
