Kothu roti.. Srilankan street food

Chapathi. :10 nos.(serves 2)

To grind :
Cinnamon :1/2 inch
Cloves :2 nos .
Khus khus . :1 tsp.
javtri. : 3/4 piece
Star anise : 3/4 piece
Fennel . : 1 tsp
Onion-chopped . : 1/2
Garlic : 3 medium pieces
Coconut:1 tbspoon
Cashews soaked : 4nos
Cumin seeds :1tsp
Chilles: 2 small nos

Ingredients to sauté:
Oil: 1tsp
Fennel seeds: 1tsp
Mustard seeds:1 tsp
Onion: 1/4 no.

Add 1tsp oil, splutter 1/4 tsp fennel seeds, add 1/4 chopped onion and the paste that is smoothly grounded.
Add add a bowl of mixed veggies carrots, beans, potatoes, peas (cut in cube size).

Kothu roti:
Ingredients :
Veggies: carrots, onions, capsicum, cabbage, cilantro
Briyani masala: 1/4 tsp
Red chilly powder: 1/4 tsp
Cumin powder :1/4 tsp
Salt to taste
Cut the chapathi /rotis length wise.

Splutter mustard seeds. Add onions and sauté till they are translucent and then add all the veggies.

Add all the listed powders under kothu roti ingredients , one by one and add the coconut based gravy.

Add the cut rotis once the veggies absorb the masala evenly.
Add 1tsp salt and sauté
Garnish with 1 tablespoon of chopped cilantro

Raita :
Finely chop onions, add some salt and half chilly and keep it for few mins. Then add some curd to it.
